Study on sterilization effect of pulsed light on bacteria in pancake

  • In the process of packaging and storage, pancake was susceptible to microbial secondary contamination, which seriously affected edible safety, it was effective to kill microorganisms in the pancake using pulsed light sterilization technology. The experimental results showed that pulse energy 400J, pulse number 20, pulse distance 10.9cm, pulse frequent 2, sterilization rate of pulsed light on bacterium in pancake was up to 99.4% in the optimal conditions.
